Sesame and Peanuts Candied
Chinese New Year is just round the corner. This time i have attempted 2 new recipes making of the sesame and peanuts candied separately. The main ingredients beside sesame and peanuts will be the maltose which can be found in any Asian stores. Otherwise, it can be replaced with honey, agave or maple syrup. A very simple recipe which requires only to melt the sugar.
Ingredients for sesame candied :
1 cup of black sesame (i have it mixed with white grilled sesame)
1/4 cup sugar
2 tbsp water
1 tbsp oil (which i think 1 tsp is sufficient)
1/4 cup maltose or 1-2 tbsp (the maltose at my place is abit hard due to the cold season)
a parchement paper + rolling pin.
Method :
Melt sugar and water in a small pot. Next add in the maltose and keep stiring until it get abit darken (about 15 minutes). To see if the syrup is ready, fill 1/2 rice bowl with some cold water and drop some syrup in. You should get an instant gel up texture piece. That means it is ready. Off fire and add in the oil and give a quick stir. Pour in the sesame grains and stir in well (have to do this quick or the candied get harden). Transfer over to the parchement paper and cover it with the sides and press it with rolling pin to your preference size (like shown on the peanuts candied). Cut into your favourable bitesizes and leave it to cool completely before storing.
Ingredients for peanuts candied :
250 g roasted peanuts (i bought it ready-grilled, just have to chop it lightly)
100 g sugar
60 ml water
1 tbsp oil
60 g malt (1-2 tbsp)
Method :
Follow the procedure as above. Instead of sesame grains change it to roasted peanuts.
