Zebra Cotton Cheesecake
This recipe is anti-vegan. But i still would like to try out. The texture is like some kaya kueh. Very interesting. As usual i omitted the eggs part and do without whipped cream. So the cake is purely cream cheese.
Ingredients
100 g fine sugar
100 g cake flour (sifted)
250 g cream cheese (i am using marscapone)
40 g butter
180 g vegetable milk (i just used water)
some lemon juice
2 tbsp green tea matcha (mixed with some water to make into some paste)
Method
(preheat oven to 150 degrees for about 10 mins)
1. Melt butter, cream cheese in a double boiler. When the batter has liquified, pour in the milk or water.
2. Remove and add in the sugar and fold in the flour (i used a whisk - to remove the little lumps from the flour.) and the lemon juice.
3. Separate into 2 bowls. Leave the plain one aside, and blend in the matcha paste to the other.
4. Grease a cake mould (i using a 20 cm) and laid parchement paper on the base.
5. First add in 2-3 spoonfuls of the plain batter in the center, next the green in the center..alternate till both batter finish. Give some light thud to remove any bubble trapped.
6. Place the cake in another bigger tray filled with some hot water.
7. Put into the oven on the lower rack and bake it till is done (about 40-50 minutes : depending on size)
