Modified 'Pulot Serikaya' kueh



Back in 2006, i make this recipe. And today i make it again but without eggs. Every ingredients are the same except the eggs part is omitted instead i replaced it with agar-agar powder.

So for the 'kaya' part :

Melt sugar in coconut milk (300 ml) with pinch of salt. When sugar melted, add in a sachet of vegetable agar-agar powder (2g) and blend well. Add in the pandan paste to your preference colourings. Meanwhile prepare 1 tbsp of starch powder in some water and set aside. Finally when the kaya starts to boil, lower the fire and pour in the starch mixture. Stir and bring to boil again before off fire. Cool it moderately. And pour over the steam rice. 

I tried an experience : i put the kueh to steam for about 5 mins before remove 

it off. And after it has cool off completely i put it in the fridge to get it set. Maybe the next time, i will simply put into the fridge since the kaya mixture had already been cooked. Less than 4h, the kueh is set and firm. 

VoilĂ . As soft as the real one with eggs.
