Pumpkin sesame pancake
Is pumpkin season !! This is a simple but sorry to say abit oily snack.
Ingredients :
400 g Pumpkin (weigh after skinned)
360 g glutinous rice flour
100 g fine sugar
some white sesame (i used grilled)
oil for pan-fry
Method :
1. Chunks the pumpkin and put to steam. When done, meshed it immediately.
2. Pour in the sugar and mix well with a wooden spoon. Next slowly add in the flour and mix again. Gradually some by some (i didn't use completely the flour, i guess it left about 50 g or so).
3. Take a large pinch and roll into a ball (reminds me of making glutinous rice balls).To flatten : you can either use with the help of 2 plastic film (so that the dough does not stick on your palm). Roll over with the rolling pin, dab with some sesame seeds and put to fry. Or like me abit lazier, flatten within palms.
4. Repeat till the dough finished. Dish up and laid on some kitchen paper towels. Enjoy with some digestion tea.
