Pâtes de Fruits
Pâtes de fruits is normally available end of year during the festive seasons. And is always very expensive for a box of about 12, can cost around 4 euros plus, depending on the brand. So i decided to give a try and see how it works. Search through the You-Tube for recipes and get ready the ingredients. I used Vitpris (35g per sachet) similar to pectin, for my first attempt. However, it didn't turn up like candy instead it became jam. I suspected i'm still lack of one ingredient - glucose syrup or on some asian video, they used maltose. So today, i took up my courage and try again.
Ingredients
4 oranges - skinned, weigh around 450 g (or any other fruits puree)
200 g glucose syrup (i used corn syrup)
200 g sugar
70 g sugar + a sachet of vitpris - mixed well
Candy thermometer
Method
Blend the oranges and pour into a pot. On the fire, stir and bring to a first boiling. Add in the vitpris mixture and stir again. At second boiling, divide the sugar in 2-3 parts and pour into the jam mixture. Final boiling, add in the syrup and bring to another peak of boiling. Insert the thermometer while lowering the heat and bring the mixture to reach a temperature of around 107 degree celsius.
Off fire and remove from stove. Line a tray with parchement paper. Carefully pour the candy in and let it sit to cool minimum 1h.
This time, my candy really works ! Perhaps orange not a good choice for this recipe as it turned up abit of bitterness. But still i succeeded. Slice the candy to biteable size and coat it with sugar.
