發糕 - Huat Kueh

發糕 (fa gao) is a Chinese traditonal prosperity cake. Is a cup-like pastry, most commonly consumed on Chinese New Year. It is made of flour, baking powder, and sweetener. Steam until the splits into a characteristic "split top" of four segments. The symbolic of this cake is "prosperity" and "raised".

However, my attempt did not achieve a "split top" of four segments instead it breaks out into a smiley face. The result is just as satisfying.

Ingredients :
170 g water
80 g brown sugar (or any sugar you prefer)
(melt them together to obtain some syrup) - set aside to cool

150 g cake flour
30 g rice flour
4 g baking powder
(lightly combine the flours together using a whisk)

Method :
1. Pour the syrup slowly into the dry mixture and whisk.
2. Lined a cup like mould (which i didn't have). Pour the batter into it about 90% full.
3. Bring the steamer water to boil. Put the huat cake in and steam for about 10 - 15 minutes.
