8 Treasures Congee (八寶粥)
Finally made this congee. I modified some of the ingredients since it wasn't my intention today to cook it. I have some balance of fine multi-grains 五谷 and decided to give it a try. I also added some quinoa, and had replaced red beans with barley, raisins with apricots. The next time i will go use glutinous rice (white and black). The peanuts weren't soft enough, i will try with cashew nuts the next round. Here are the recipe :
Ingredients (A) :
50 g red beans or barley
20 g peanuts
15 g dry lotus seeds
15 g pine nuts
(soak at least 2h)
Ingredients (B) :
50 g red dates
50 g raisins or dried apricot
(1. soak until soft will do)
(2. sliced the apricots and red dates if possible)
Ingredients (C) :
180 g glutinous rice
50 g black glutinous rice
or 230 g fine multi-grains
(soak at least 2h)
Ingredients (D) :
2 L of water
some rock sugar or black sugar
Method :
1. Pour A + C together into a pot with 2L of water. Bring to boil on high heat. And reduce heat to medium and simmer for 90 minutes (i did it with 60 minutes).
2. Add in B and simmer for 30 minutes.
3. Finally add in the sugar and adjust to your sweetness.
4. Off fire and let it stand for 10 minutes before serving.
P.S. Alternatively, you can put into an electric cooker. Save you the time to watch the congee on the stove.
