Vegan Swiss Roll
Very satisfying results ! Finally manged to make this spongy cake without eggs ! For a try, i decided to make it simple.
Ingredients
200 g Self Raising Flour - sifted }
1 packet of baking soda - sifted }
1 tsp salt } set aside.
2 bananas
2 tbsp Apple cider vinegar
100 g brown sugar
1 tbsp warm water
1 tbsp vanilla extract
50 g vegetable oil
Method :
1. Preheat oven to 200 degrees or Gas no. 6.
2. Line the sheet pan with parchement paper.
3. In a mixing bowl, mash bananas, add in vinegar and mix again. Then add in brown sugar and mix again. Add in 1 tbsp of warm water and mix again. Final, add in vanilla and oil, mix it altogether and whisk with an electric hand whisk until smooth and fluffy.
4. Add in the dry mixture a little at a time. Mix well. Then add in 1/2 cup of warm water (this part i only added 5 tbsp of water as i worried it will be too runny, in fact i can try a few more spoonfuls as the batter was kind of thick to smooth) a little at a time while folding. Doing this for a few minutes is the secret to make the cake spongy.
5. Then pour the mixture into the tin and smooth level. Bake 10 -12 minutes or until the sponge is springy to touch. Remove from the oven and leave it to cool with a damp tea cloth.
6. Turn the sponge out on a greaseproof paper, dusted with cocoa powder or icing sugar.
7. For the filling, i spread it with jam (of your choice) and slowly roll the sponge up.
8. Slice it and serve with your tea or coffee.
If your like your swiss roll with cream, you will need 100 g of vegetable fats (at room temperature) and 100 g of icing sugar.
After step 5, while waiting for the sponge to cool, make the cream.
- Put the vegetable fats in a mixing bowl and beat with an electric hand whisk until creamy.
- Whisk in the icing sugar a little at a time, then spread the mixture over the top of the sponge.
Back to step 6.
9. Put the Swiss roll in a fridge to prevent the buttercream from melting. Before serving, garnish with cocoa powder or sugar.
