Palm sugar pak tong gou

Very successful attempt of this childhood snack - pak tong gou. I replaced it with palm sugar instead of white sugar. This time it managed to raise very well.

Ingredients

A) 240 ml of warm water + a packet of yeast
     200 g Rice flour - sifted.

Whisked together, cover with film and let it stand for an hour.

B) 120 g of palm sugar
     200 ml water.

Bring them together over medium heat, till the sugar has melted. Off fire and leave it to cool.

1. After an hour, batter (A) should have raised. Deflate the mixture using a whisk and pour (B) in and blend well. Cover again and let it stand for another hour.

 2. Greased a round tray (I am using a tray at diameter of 18 cm). Pour the mixture over and put to steam for 30 minutes or till it cooks. Leave to cool before slices it.
