No-bake Cake

No-bake cake great for the festive seasons ! ! Ingredients are simple, 10 minutes preparation and set minimum 4-5h or even overnight..I tried with 2 type of taste : first was simply vanilla cream top with crushed candied nuts and the other was matcha and vanilla cream top with muesli flakes. Conclusion is the nuts taste much better maybe due to the roasted aroma. I have digestive biscuits on the first and cereals biscuits on the second. Both lightly soaked in coffee. So here it goes for the recipe :

Ingredients (20 cm cake mould) :
Some tea biscuits of your choice
100 g room temp butter
120 - 150 g fine sugar 
1 tsp vanilla essence
1-2 tbsp milk (i used water)

toppings optional 
crushed candied nuts or muesli flakes or grated chocolate or chocolate rice etc 


Method :
1. In a mixing bowl, add in butter, sugar and vanilla essence and using an electric beater to cream the mixture to some light fluffy texture.  
2. Prepare the cake mould by laying some plastic film over and a parchement paper over it. 
3. Set aside a bowl of warm water and stir in  some coffee powder - for the biscuit. 
4. Crushed the nuts ready. Take a few spoonfuls of nuts and mix with some butter. Spread it on the tray. 
5. Lightly soaked the biscuits and place it on the nuts till almost fully covered. Top and spread the cream over evenly. (for this i used only 2 layers)
To be more creative, nuts-biscuits-cream-nuts-biscuits-cream. 
6. Final layer, top with the nuts. Chill it all till set. 



For the second, i added matcha and top with museli.. Better combination will be matcha and vanilla with candied nuts.
