Popular Delicacy - Mi Jiang Kueh
Last made this kueh was like 10 years back but wasn't very successful. Recently, i happened to come across a blog sharing on this recipe. And today i decided to give a try. Great ! At least i feel the 'tangy' feeling when bite.
It is very easy to make just need the yeast to raise properly.
For the fillings, you can choose between peanuts + sugar or grated coconut + palm sugar / orange coloured sugar.
Ingredients :
130 g Plain flour
1/2 tsp Baking soda
1 egg (if you are not vegan)
1/2 tsp yeast
10 g sugar
160 ml water
Method
Mix all ingredients together to form a smooth batter. Leave it aside for 30 minutes. Pour on a non-stick pan, smooth out to get an even thickness (this part need to practice). Cook on low heat over 6-8 minutes. Remove from pan, spread the fillings. Fold into half and serve.
For this recipe, i chosen grated coconut. I used about 2 cubes of gula melaka (palm sugar) about 50 g and 70 ml of water. Melt it under low heat, then pour in the grated coconut to well absorb the syrup. It should be moist but not dripping. Leave to cool.
Make about 3. So leftover quite an amount of fillings. You can eat it with plain bread, it is just as delicious.
