CNY Dishes II
玉寶乾坤
- A few florets of broccoli, blanched with a pinch of salt and set aside. Some chinese mushrooms rehydrated, squeezed dry and fry with a few slices of ginger. Add some water. Season with some dark soya sauce, mushroom sauce, agave syrup, pepper, and 5 spice powder. Adjust to your taste. Bring to boil and simmer. Thicken the sauce if required. (For me, i prepared it 1 day before) Laid out the broccoli on the serving plate, and place the cooked mushrooms in the centre. Drizzle with the sauce.
福田滿門
- A canned of lychees or longans, drain and rinsed. Leave aside to remove as much water as possible. Mashed some tofu, dice a mushroom and chopped finely some coriander. Mixed into the mashed tofu and seasoned with some mushroom sauce, salt, pepper and sesame oil. Adjust to your taste. Pick up 1 lychee and fill the mix ingredients into the well. Complete till all lychees finished. Place a soaked seaweed (for soup) on the base of the serving dish. Put all the packed lychees on it and pour in some stock soup around. Top it with some goji berries and put to steam for about 10 mins.
事事如意
- White mushrooms of about 250 g. Rinsed and dab dry and diced into small pieces. Saute with 1 tbsp of margarine and oil till slightly brown. Dish up and add in 1/2 - 1 cup of instant oats, 1/3 cup of bread crumps (i replaced it with some finely grinded oats with chia seeds). Crack in an egg (i replaced it with some potato starch). Add in about 2 tbsp of chopped basilic. Seasoned with salt and pepper. Mix well the ingredients. Take out some the mixture and compact it into a ball. Pan-fry with some oil till the balls turn brown. Before serving, drizzle over some squeeze lime or lemon. It can be served hot or cold without any additional condiments. It is yummy delicious.
