CNY Snacks - Almond Cookies
Chinese New Year is approaching. And i envy to make something for the festive. Tried pineapple tarts before but wasn't very successful and really takes a lot of work. Prefer something simpler but still yummy. Until i passed by this recipe. Today i gave a try. Supposed to melt in the mouth, but i guess i over baked it. Overall not too bad. Since it is so simple, i will definitely make it again and make sure it really melt in the mouth.
Here are the ingredients :
250 g Self Raising Flour
70 g Icing sugar
75 g Almond nut powder
1/4 tsp salt
150 ml Cooking oil (i used melted butter - but remember to cool off before adding into the mixture)
1 tsp Vanilla essence
Method :
1. Preheat oven to 150 d.c.
2. Combine well the dry ingredients in a bowl. And add in the oil and essence.
3. Knead into a dough (note : your hands will be very oily).
4. Pinch out a teaspoon size, roll into a ball and slightly flattened. Line on a baking tray. Don't place them to close as the cookies will expand due to the self-raising flour.
5. Put to bake for 15-20 minutes. Allow to cool before storing in an air-tight container.
