Ondeh ondeh Muffins
Ondeh ondeh balls coated with grated coconut but ondeh ondeh cake, is my first time hearing it. My niece made the cake on my mom's birthday and i thought it was interesting, so i google for the recipe. And i found this ! Still need some improvement...over estimated the grated coconut, so in the end i ate it with bread, tasted just as delicious...
Ingredients
Fillings :
200 g gula Melaka (palm sugar)
120 ml water
grated coconut
Batter :
200 g cake flour
1/2 tsp baking powder
125 g soften butter
200 g sugar
100 g coconut milk (i think i used only about 50 g)
pandan paste
a pinch of salt
Method
1. Preheat oven at 180 degrees. For the fillings, melt sugar with water over medium heat, Add in the grated coconut until all are absorbed and preferably no more sauce. Set aside.
2. Line muffins mould with cupcake papers. Sift the flour in a working bowl. Cream butter and salt till smooth. Alternatively use an electric mixer.
3. Add sugar gradually. Fold in the dry ingredients and alternate with the coconut milk until all ingredients are incorporated.
4. Drop 2 tbsp of batter into the cupcake liner and top with the fillings and refill the batter till 3/4 full. Complete till all batter is finished.
5. Put in to bake on the middle rack and bake about 25 minutes. Check with a skewer. Cool cakes completely.
