Snow Skin Mooncake

Always wanted to learn how to make snow skin mooncake. Recently my friend gave me a mould, and i search for recipes from You-tubes on how to make it. If you are able to buy cooked glutinous rice flour, by all means. For me to go to the Asian store is about 40 mins and not practical, and so i also learnt how to fry the flour. Today, i decided to give a try before the Mid-Autumn festival next month.

Ingredient for the skin :

150 g cooked glutinous rice flour (buy offshelve or alternatively, fry at home : on a dry pan till it turns slightly brown)
150 g icing sugar - shift to remove lumps.
50 g vegetable oil or shortening
180 ml of cold water (approximate)
Set aside 2 tbsp cooked glutinous rice flour (for dusting)

Method

In a mixing bowl, mix all the above ingredients together; very careful with the water as you don't want the pâte to get too moist. Next divide the pâte into a few colours (optional). In this attempt i tried with pandan paste and red permitted food colouring.  Prepared the fillings (your choice) 1-2 days before and for this i did not really weigh the pâte and the fillings. I estimated with my palm. Fortunately, it fits really nice on the smallest mould. Flatten the pâte and put a filling in the centre and well wrap up with the skin. Gently rotate the ball within the palms and coat with the cook glutinous rice flour, dust the extra out. Put into the mould and press lightly to get the floral cuttings. Upside down and gently knock out the cake. Continue till all the pâte is finished.


 Voilà. this is the first cake, can see that it has some extra flour. 

For the fillings :
Soaked 160 g mung beans overnight.
50 g sugar (the sweetness just nice)
10 g starch flour
10 g of oil (2 tbsp)

Method

Drain the water from the mung beans, put some water to just cover the beans. Either you put it in a rice cooker (which i did, but the final result too dry) or put to steam (which i will try it the next time). To check if the beans are soft, take 1 out and mesh it. Remove from heat, and well mesh it with a spoon. Heat a pan with oil, stir fry the mesh beans (to remove the moisture). When is about it, add in the sugar and fry again. Next add in the starch flour and mixture should become abit sticky. Fry for about 10 minutes and remove from heat, and let it cool off. At the working area, knead the mixture to get a smooth texture. And after roll up like a log and wrap with plastic film and put into the fridge till ready to wrap.

 That's the final product of the cakes.
