Vege Oyster Omelette (no eggs)


Finally ! Vege oysters omelette without eggs version! It is really not easy to search for it, and my husband loves it !

Ingredients:
Straw mushrooms (canned type), rinsed and sliced
Some white fresh mushrooms - rinse lightly with salt, removed the stalks for other dishes. Sliced
Some vegetables like lettuce, bean sprouts, carrots into strips 
Cut the roasted seaweed sheets into strips 

For the starch part :
20 g Corn flour 
60 g Sweet potato flour (i managed to find potato flour)
180 ml Water 
some tumeric powder (for the 'eggy' colour)
a pinch of salt
Mixed well and set aside

Method :
Oil a non-stick pan (very important) and stir fry the white mushrooms till it aroma. Next stir in the straw mushrooms and fry for like 2 minutes. Ladle about half of the some flour mixture just enough to cover. Add in the veggies and the seaweed strips. Then pour over the balance flour mixture (may not need all) and give some swirl. Add oil if needed. Flip over or cut into 4 parts and turn them over. Off fire and serve hot with your favourite condiments.
