Vegan Tiramisu

Attempted this vegan dessert - Tiramisu. Not that bad overall, except that the cream doesn't hold and kind of difficult to do serving. It simply melted..however, the taste of the dessert was really marvellous ! My friend suggested to add in agar-agar to hold it.

Ingredients

Vegan biscuits if you can find, for this i have normal butter biscuits.
400 g soft tofu
250 ml of vegetable cream
80 g sugar
1 tsp of vanilla extract
Cocoa powder

Preparation

1. Blend tofu, sugar and vanilla extract. Pour out and set aside.
2. Next whisk up the vegetable cream using an electric hand appliance till it raises. This acts as the 'egg white'.
3. Fold in the cream to the tofu batter. And refrigerate for 2h.
4. In another bowl, prepare the coffee and leave to cool slightly.
5. Dip enough biscuits in the coffee to cover the base of the dish (i am using a 30x17cm oval ceramic dish). Spread the cream mixture over and sprinkle with cocoa powder. Repeat the procedures till the cream is finished (about 3 layers).
6. Cover with plastic film and leave in fridge for minimum 6 hours.
